It seems margaritas go hand-in-hand with New Mexicans and our cuisine. Finding a good margarita can be a challenge sometimes, the balance of sweet and sour and tequila is crucial. You don’t want your drink to taste overly tart—not too overpowered. You want a crisp, refreshing drink—and luckily, I found the ideal spot.

Right across the street from the Expo New Mexico grounds lies a welcoming Mexican restaurant called Lindo Mexico. A place I never knew existed until last year, Lindo time and time again makes the perfect marg. Consistency is key, especially with a different rotation in bartenders. Lindo doesn’t skip a beat. And once it arrives at your table, you will gasp at the task ahead to drink this beautiful monstrosity. 

When those margaritas are going down easy, you know you’re going to want to grub down. If you’re mulling the decision of what dish you’re going to get, try the chile rojo ($12.99) which features a homemade pork stew that will set your mouth in a fiery euphoric blaze. In my opinion it’s the quintessential match with a marg.

While you’re lost in the trance of succulent food and drink, don’t forget to truly appreciate the atmosphere of Lindo. Your first greeting is by the two agave farmers upon entering the grill, and once you step in, you’re automatically dipped into a true cultural atmosphere.

With Cinco de Mayo right around the corner, Lindo is the joint to put on your list to visit. On Wednesday Lindo will be running a special including $5  classic margaritas all day. If you can’t make it, no worries, $5 marg specials run throughout the week from 4 to 6pm. So make sure to prepare for the craziness of Cinco with a cold Lindo marg.
